Prepare the Sesame Slaw by combining the slaw vegetables together with tahini, sesame oil, apple cider vinegar, and soy sauce. Stir through until smooth, then season with salt and pepper. Sprinkle toasted sesame seeds on top.

Toast bread and add a small amount of slaw, followed by sliced protein, avocado, and salt and pepper to taste. Close sandwich, slice in half and enjoy.
