Toast the bread.

In a food processor, add chickpeas, tahini and lemon juice, and zest. Blend until smooth. Season to taste.

Spread hummus on both slices of bread. Add cucumber, and cut into the ribbon. Add the carrots’ ribbons. Top with sprouts. Cover with the other piece of bread.
