Cheesy Jalapeno Cauliflower Melt with Tomato Basil Bisque

Preheat the broiler.

In a pan, heat the oil over medium heat. Add the onion and cook until golden brown, about 3 minutes. Stir in garlic and cauliflower. Cook until cauliflower is soft, 5-10 minutes. Season with salt and pepper to taste. Remove from the heat and transfer to a mixing bowl. Let cool.

Add the pickled jalapeno and shredded cheese to the cauliflower mixture and mix. Divide the mixture among the toast.

Broil until the cheese melts, 3-5 minutes.

Warm the soup in the microwave or on the stove and serve it with the warm open-face sandwich.
