Olive Oil and Monounsaturated Fatty Acids
Olive oil is an anti-inflammatory oil known for its high levels of monounsaturated fatty acids. It is also a good source of phytochemicals including polyphenolic compounds, squalene, and α-tocopherol.
Monounsaturated fats are fat molecules that have one unsaturated carbon bond in the molecule. Oils that contain monounsaturated fats are typically liquid at room temperature, but start to turn solid when chilled.
The American Heart Association says that for good health we should consume foods that contain monounsaturated fats in place of those that contain saturated fats and/or trans fats.
Some foods containing saturated fats include beef, pork, butter cheese, and fried foods
